Three Hundred and Forty One: Stuffed Mushrooms!

I never used to like mushrooms, in fact I hated them, they always looked so slimy so I was always put off them and refused to eat them. Until I was introduced to button mushrooms, having been cooked whole they didn't have a slimy look and were cute and appealing.

A few years later I now love mushrooms, be it button, exotic, closed or open cup they all have their distinctive taste and always taste delicious when cooked in a little butter. I had a go at stuffing some Portobello mushrooms today, for the first time and they turned out very nice.

The stuffing is a mixture of cream cheese, shredded cooked ham hock, chopped onion, grated cheese and chopped button mushrooms, as well as a few spices such and other flavourings including garlic salt, onion granules, smoked paprika and a few other bits and bobs.

They were amazing and I highly encourage everyone to eat yummy mushrooms, one phrase I have stolen from a friend is that they're nature's meat, but in a non-meat sense of course.
